Today I wanted to share this recipe that I originally found on
- 2 1/2 cups pecans
- 2 Tbsp instant coffee granules or a shot of espresso
- 2 1/2 Tbsp cocoa powder
- 3/4 tsp stevia
- 1 Tbsp coconut oil
In a food processor or blender, if you don’t have a food processor, put in all the ingredients except for coconut oil and pulse ten or so times. Then add the coconut oil. In the original
Mix together for 2 minutes constantly scraping down the sides. Make sure the mixture is sticky and if it doesn’t stick together keep working it but do not over mix to the point where it is butter.
Then roll out into little balls. I had to squish the mixture together to get it to really stick when rolling it.
The recipe that I got this from had some optional topping including rolling them in Perfect Keto Chocolate MCT Oil Powder, Swerve Confectioners, or in a mixture of Swerve Confectioners and cocoa powder
