Happy June!!!

Don‘t worry if you are not kept and the name of this snack turns you off it is not as bad as it sounds. Keto diets, if you don’t know, are centered around eating way fewer calories and more fats and proteins. Fat bombs are great if you are on keto as a snack instead of other snacky foods that are carb loaded but they are also a good snack if you want to eat something healthier.

Today I wanted to share this recipe that I originally found on pinterest and love it! I hope that you do too and lets get on with the recipe.

Ingedients:

  • 2 1/2 cups pecans
  • 2 Tbsp instant coffee granules or a shot of espresso
  • 2 1/2 Tbsp cocoa powder
  • 3/4 tsp stevia 
  • 1 Tbsp coconut oil

Directions:

In a food processor or blender, if you don’t have a food processor, put in all the ingredients except for coconut oil and pulse ten or so times. Then add the coconut oil. In the original recipe there was only instant coffee grounds but I didn’t have any around the house so I looked up the espresso shot alternative but in doing that you might need to add more dry ingredients.

Mix together for 2 minutes constantly scraping down the sides. Make sure the mixture is sticky and if it doesn’t stick together keep working it but do not over mix to the point where it is butter.

Then roll out into little balls. I had to squish the mixture together to get it to really stick when rolling it.

The recipe that I got this from had some optional topping including rolling them in Perfect Keto Chocolate MCT Oil Powder, Swerve Confectioners, or in a mixture of Swerve Confectioners and cocoa powder
