I just found this recipe among my mom’s recipe box and am OBSESSED! If you don’t like dense dark chocolate cupcakes then these are not for you haha

* we changed it a little but the original recipe is from Beach Body on Demand

You will need:

  • 2 and 1/2 cups of chickpeas rinsed
  • 3 eggs
  • 1/2 cup coconut sugar or maple syrup
  • 1/3 cup cocoa powder
  • 1 tsp baking soda
  • 3 tsp vanilla powder
  • about 1/4 cup chocolate chips but we only use a few on each muffin
  • 1/4 cup chopped walnuts (optional)
  1. Preheat oven to 350°
  2. line 12 muffin cups with nonstick parchment papers (we got ours from Superstore for $2.50)
  3. place 2 and 1/2 cups of chickpeas into blender with 3 eggs and blend
  4. add 1/2 cup of coconut sugar OR maple syrup and 1/3 cup cocoa powder and blend again
  5. add 1 tsp baking soda, 3 tbsp melted coconut powder, 1 tsp vanilla extract and blend
  6. I also added 1/4 cup of chopped walnuts to add some flavour and texture but don’t blend for TOO long!
  7. divide the batter among the 12 tins as these muffins don’t rise much and need to be filled and place 4 chocolate chips on each (or more if you like chocolate haha)
  8. bake for about 18 minutes and enjoy!

*only makes 12 because you have to fill the cups
