Hello everyone! My mom made these DELICIOUS muffins that she found on Pinterest and I needed to share the recipe with you all (don’t worry I did bake this batch 🙂 )

You will need:

  • flour
  • brown sugar
  • coconut sugar
  • baking powder
  • pumpkin pie spice (see below for DIY)
  • pumpkin puree
  • vanilla extract
  • almond milk
  • coconut oil
  • molasses

to make pumpkin pie spice:

  • 3 tbsp cinnamon
  • 2 tsp ginger
  • 1 tsp nutmeg
  • 1 tsp all spice
  • 1/2 tsp cloves
  • mix and put in an empty spice jar!

Mix 3 tbsp of cinnamon, 2 tsp ground ginger, 1 tsp nutmeg, 1 tsp all spice, 1/2 tsp cloves and pour into an empty spice jar.

First, mix 2 cups of white flour with 1 and a 1/2 cup whole wheat with 1 cup brown sugar, 1 cup coconut sugar, 2 tbsp of baking powder and 2 tbsp of pumpkin pie spice.

Next for wet ingredients in another bowl, mix 2 cups of pumpkin puree, 1 tbsp of vanilla extract, 1 cup of almond milk, 1 cup of coconut oil (melted slightly in microwave).

Stir & combine ingredients, fill muffin cups and add toppings! My favourite is oats, pumpkin seeds & walnuts but you can add coconut sugar as well if you want or any other seeds!

Bake at 375° for 16-20 minutes and ENJOY 🙂
