
Hello friends! I am SO excited for fall YAY
I found this recipe while on Pinterest looking at dairy-free recipes (I am dairy free for my skin & stomach) and this screamed fall to me so I had to make it!! 😉 I am so not a baker! But recently, I have been loving making vegan recipes (I almost used tablespoons instead of teaspoons HA). Let me know what you would like to see next here on BasicBloggerss because I am loving these vegan recipes lately!
You will need:
- 12 pitted dates
- 1 cup of chai tea prepared
- 1 1/4 cups of oat flour (you can make your own like I did by blending up 1 1/2 cups of oats in a Magic Bullet)
- 1/4 cup tapioca starch-found in the international food isle
- 1/4 cup almond milk
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon lemon juice
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon ginger
- 1/2 teaspoon cardamon
- 1/2 teaspoon of cloves (or allspice)
Preheat the oven to 350°
Pour 1 cup of chai tea over 12 dates and let soak for 10 minutes.
While letting that sit, mix 1 and 1/4 cups of oat flour with 1/4 cup tapioca starch, 2 tsp of baking powder, 1 tsp baking soda, 1 tsp cinnamon, 1/2 tsp ginger powder, 1/2 tsp of cardamon and 1/2 tsp of all spice.
Next blend the chai date mixture with 1/4 cup almond milk, 1 tsp vanilla, and 1 tsp of lemon juice. (Don’t worry if there are little date pieces at the bottom).
Mix the dry ingredients & the liquids, then pour into a lightly oiled loaf pan.
Bake for 28 minutes at 350°.
Cool before frosting and if you want to, add walnuts on top!
Coconut oil glaze:
- 1/8 cup coconut oil
- 1 cup icing sugar
- 2 tablespoons almond milk
- 1/2 teaspoon vanilla
Just mix together until smooth!
