Hey guys! I am not vegan but I have been loving trying different vegan recipes lately! And I admit, watching What the Health on Netflix did play a little role in that. My mom saw this recipe on Facebook and since I love it, we keep making it (just don’t tell my dad it’s made with beans LOL).
You will need:
- 1 can black beans
- 1 cup pitted dates
- 1/4 cup & 1 tbsp coconut oil
- 3/4 cup & 1 tbsp maple syrup
- 1/2 cup cocoa powder
- pinch of sea salt
- 1/4 cup peanut butter
Using a good blender put in 1 can of (rinsed & drained) black beans, along with 1 cup of pitted dates, 1/4 cup of coconut oil and 3/4 cups of maple syrup, 1/2 cup cocoa powder and blend.
In a small bowl, mix 1/4 cup of peanut butter with 1 tablespoon of maple syrup and 1 tablespoon of coconut oil with a whisk.
Pour half of the fudge mixture into a pan lined with parchment paper, then add a layer of the peanut butter sauce and top with the rest of the fudge. They taste SUPER yummy with coconut flakes or walnuts on top!
Put in the freezer overnight, then cut and enjoy in the morning 🙂
