Hello!
Since we are amongst blueberry season (and the Lower Mainland is known for their abundance of blueberries and raspberries!!) I wanted to share this family recipe that my mom and I have been using for so long! I have such a sweet tooth, and I would way rather have a yummy dessert (raspberry cheesecake? yes please!! haha) than a burger or chips or something. And if I could only choose dessert to have for the rest of my life, it would be this blueberry kuchen!!
enjoy!

^^ YUM :))
Serves 6-8
1 cup flour
1/8 teaspoon salt
2 Tbsp sugar
1/2 cup butter
1 Tbsp white vinegar
3 cups frozen blueberries
2 Tbsp flour
2/3 cup sugar
1/2 tsp cinnamon
2 cups fresh blueberries
Begin by heating oven to 400 F.
Mix first 3 ingredients in a KitchenAid mixer or bowl (I use my mom’s KitchenAid for everything!!)
Cut in butter until mixture has crumbs the size of rice krispies
Sprinkle vinegar on top
Press into a 9″ springform pan, making sure crust goes 1/4″ up the sides.
Pour in 3 cups blueberries.
Mix in next 3 ingredients.
Pour over blueberries.
Bake for 50-60 minutes, until crust is golden, and bubbles form in the center.
Remove from oven and immediatly pour over 2 cups blueberries.
This is best served warm with ice cream or frozen yogurt!!
Making it with raspberries instead is also delicious 🙂
What is your favourite summer time recipe? I would love to know!!
