Hey guys! Ever since Meredith Foster posted her video which included the matcha power bite balls (start video at 2.17), Rebecca and I have been obsessed with our version of these energy balls! We made these on our Insta stories a few weeks ago and got lots of requests to put the recipe on our blog, so here it is! This recipe is super flexible as you can pretty much add anything that you want to flavour your power balls. And it is DELICIOUS
What you need:
- 1 Tbsp cocoa
- 1 cup coconut flakes
- 1 cup chopped dates (pitted)
- soy milk
- 1/2 cup almonds (preferably chopped or slivered)
- 1 Tbsp coconut oil
- 1 Tbsp peanut butter
- 1 Tbsp chia seeds
- dash of cinnamon
- rolled oats (just in case your splash of milk was too big)
- rolled in more coconut flakes
First, put 1 cup of dates in your food processor. You can purchase individual pitted dates or buy them in a block , which I usually do and chop into small cubes so its easier on the machine.
Next add in the cup of coconut & 1/2 cup of almonds or another nut if you would rather. Add in the tablespoon of peanut butter & coconut oil at the same time as the chia seeds and small splash of soy milk. You can add a little bit more milk at the end if the dough is too crumbly.
I then put the batter in the fridge for 10 minutes and after that, roll into balls &then in the coconut flakes. Put into the freezer and eat!!
