I know I know, I am here with another recipe but with exams this week I did not have time to go out and take OOTD pictures! But Trust me there will be many outfit posts in the future 🙂
I am NOT a morning person, and if you have been following our blog for a while now then you know! I have a couple blog posts already like “3 Quick & Easy Breakfast Ideas for Back to School” and Rebecca has a post “How to be a Morning Person” and I’m pretty sure its aimed at me 😛
Anyways, I found this DELICIOUS recipe on Pinterest (by Fit Foodie Finds) because I love quick things that I can make the night before and have my mornings a little less hectic if I sleep in.
You will need:
- 1/2 cup blueberries
- 1 tsp vanilla
- 1 tbsp honey
- 1 container of yogurt
- 3/4 cup of soy/almond milk
- 1 cup rolled oats
- 2 tbsp chia seeds
- cinnamon for flavour
- 1 tsp lemon zest
- coconut flakes to put on top
Mash up 1/2 a cup of blueberries (I usually end up adding a few more) in a large bowl, then add 1 teaspoon of vanilla extract, 1 tbsp of honey, 1/2 cup of lactose free yogurt (sometimes I don’t even include yogurt), and 3/4 cup of soy/almond milk.
Once that is all mixed together, add in 1 cup of rolled oats, 2 tbsp of chia seeds-you don’t have to but they do soak up most of the milk for better oatmeal, a pinch of cinnamon, 1 teaspoon of lemon zest (this is a MUST) and mix again until smooth. The lemon zest adds so much flavour, you really cannot skip out on this!
Now you are good to put it in the fridge overnight 🙂 In the morning, add anything from cinnamon & coconut flakes to fresh blueberries to add more flavour.
