Hey guys I know that some of you might have been expecting my Thailand post but that will have to wait one more week until I have all my pictures. This week I wanted to share with you one of my favourite cupcake recipes that my sister, Bedine, and I made this week. They are so good. They may not be the simplest recipe but it is totally worth it. I hope you try this recipe and enjoy it as much as I do.

Cupcake Ingredients:
1 2/3 cups flour
1 cup sugar
1/4 tsp baking soda
1 tsp baking powder
3/4 cup salted butter
3 egg whites
3 tsp vanilla extract
1/2 cup sour cream
1/2 cup milk

Strawberry Sauce ingredients:
3 cups diced strawberries
1/4 cup sugar
less than 1/4 cornstarch
some cold water

Matcha Icing Ingredients:
4 cups powdered sugar
1 cup butter(salted or unsalted)
3 tsp vanilla
1-2 tsp milk
matcha powder

Cupcake Steps:

Preheat the oven to 350°F.  Mix together the flour, baking soda, baking powder, and sugar in a large bowl. Add the butter, egg whites, vanilla, sour cream, and mil making sure not to over mix the ingredients. Next fill the cupcake liners just over half way and bake for 18-20 minutes. Let them cool. Once they are cool take a knife and cut a whole down the middle making sure that it is not all the way to the bottom of the cupcake. Set aside until the strawberry sauce in ready.

Strawberry Sauce Steps:

Make sure that the strawberries are cut small enough to fit into the centre of the cupcake since they will not break down in the sauce as much as you might hope. Take the strawberries and the sugar in a pot and have the stove on simmer or low so that you do not burn the sugar and strawberries. While that is on the stove mix the cornstarch and cold water in a bowl until it becomes a cloudy paste or liquid. It is important that the water is cold or else that cornstarch will clump together. Pour that into the strawberry mixture and stir/cook until it becomes a thick sauce. Let it cool. Once it is cool scoop it into the cupcakes where you created the whole.

Icing Steps:

Take all of the ingredients besides matcha powder and mix them all together until you have a nice creamy icing. Next take small scoops, I used less than a teaspoon, and mix in the matcha powder slowly. Pour as many spoonfuls until you get your desired taste. After I got my desired taste I added a bit of food colouring since it was not as green as I had hoped for. When making Icing it is very important to taste test it so that you know you have the right taste and consistency.
