Hey guys!! I am loving these cookies and Christmas is coming so I thought it would be great to share this recipe since it involves candy canes/mints plus they are great to bring to parties 🙂 This recipe was inspired by The Kitchen Magpie and Our Best Bites.

What you will need:

  • 1 cup soft margarine
  • 1¼ white sugar
  • ¼ cup brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1½ tsp peppermint extract
  • 1 tsp baking soda
  • 2½ cups of flour
  • 1/2 tsp salt
  • 12 candy cane pepper mints or 3 candy canes (crushed)

Step 1: Set the oven to 375°

Step 2: Mix together the margarine and sugar until its light & fluffy. Add in the egg, vanilla, peppermint extract and mix more. Next beat in the flour, baking soda and salt a little at a time.

Step 3: Take a heaping tablespoon of dough, role it into a 1″ ball and place on cookie pan.  *These cookies spread, only put 6 on a pan* Flatten the cookies with a cup (wet the bottom of a cup with water or it will stick to the cookie).


Step 4: Place crushed candy on top of cookies.  Try not to get any on the pan or it makes it harder to clean off later (parchment paper is ideal).

Step 5: Bake at 375° for 7 minute-until golden on the bottom. Cool then enjoy! They make approx: 36 cookies
