I found these great recipes and just had to try them! Each recipe takes less than 5 minutes and they taste amazing. There are three recipes in a mug. A brownie, a blueberry muffin and a banana muffin. I love eating one of these for breakfast or after school and they are super easy to make!
Tips:
- Using a wide rimmed mug allows quicker/even cooking and easy access for a scoop of ice cream…but isn’t necessary. Any microwaveable mug will work but you may have to keep checking every 30 seconds after the first minute.
- A “pinch” is literally a small pinch.
- Do not use olive oil for the vegetable oil-the taste is too strong for this small amount and it ruins the flavour.
Brownie:
This brownie recipe is a request from my friend 😉 It is a little bit too rich for me- but I am not a chocolate fanatic. My mom tried this one and says that adding the caramel squares tops it off!
- 1/4 cup flour
- 3 Tbsp sugar
- 2 Tbsp cocoa powder
- pinch salt
- pinch cinnamon
- (whisk/stir above 5 ingredients in mug)
- 1/4 cup milk (water works too)
- 2 Tbsp vegetable oil
- 1/8 tsp vanilla
Stir in:
- 1 Tbsp chocolate chips
- 2 Kraft Caramel squares (optional; but delicious)
In a microwave safe mug, add first 5 ingredients and use small whisk to stir. Add liquids and mix thoroughly. Stir in chocolate chips and caramel squares.
Heat 1 minute and then add 30 second intervals until it feels firm when you touch the top. Mine took 1 min 30 seconds in these mugs.
Blueberry Muffin:
You will need:
- 1/4 cup flour
- 2 Tbsp sugar
- 1/8 tsp baking powder
- pinch baking soda
- (whisk/stir)
- 3 Tbsp milk
- 1 Tbsp vegetable oil
- (stir well)
- 2 Tbsp blueberries (fresh or frozen)
- sprinkle brown sugar(optional)
In microwave safe mug add first 4 ingredients and stir well or whisk together. Add milk and oil, stir well and then mix in blueberries. Top with brown sugar (optional).
Microwave 1 min 30 seconds and check. If top feels wet, continue to microwave every 30 seconds until firm but moist.
Banana Loaf/muffin/bread:
- 1/4-1/3 ripe banana (mash well in mug-no chunks)
- 2 Tbsp milk
- 1/4 tsp baking powder
- pinch salt
- 1 1/2 Tbsp brown sugar
- 1/4 tsp vanilla extract
- 5 Tbsp flour
- 3/4 tsp cinnamon
- 1 Tbsp vegetable oil
- (mix well)
- Sprinkle 2 tsp chopped nuts on top (optional but tastes so authentic).
Microwave 1 min 30 seconds and check. Top should feel spongy but not wet. If needed, microwave 30 seconds more and repeat until cooked.
