Hey my lovely friends of the internet I feel like it has been a little while since I shared a recipe with you so I feel that it is time to make something new. I wanted to share with you a new take on the traditional quesadilla. I found a recipe on allrecipes.com for farmer’s Market Vegetarian quesadillas. I took that recipe and altered it to what I wanted it to be. I hope you enjoy this because I sure did.
What I used:
shredded cheese.
red pepper
yellow pepper
zucchini
sweet onion
soft tortillas
I didn’t use any exact measurements like the other recipe did I just went with how much of each vegetable I wanted.
Step One:
Chop all the vegetables into a small pieces. Make the pieces small enough that they will fit easily in your mouth.
Step Two:
Cook all the vegetables together in either a non stick pan or put some butter or oil in the bottom so that they don’t stick. Cook them for 7 minutes then put them in a bowl.
Step Three:
In the same pan place the tortilla in the pan. Place some of the cheese on the fist tortilla, then pour some of the cooked vegetables on top. When you do that place a bit more cheese on top and stick the second tortilla on top. Cook for 2-3 minutes on both sides.
Step Four:
Repeat step four with the rest of your ingredients then cut up and serve. It is super easy and yummy. IT is great for someone like me who does not always like to spend a lot of time in the kitchen or to just mix it up. I hope that you enjoyed this and try it out for yourself!
