There are so many people right now who either are actually gluten free or on the gluten free trend so here is a really yummy recipe that uses chickpeas instead of flour. These are really delicious and remind me of cliff bars. They would be a really cute and easy dessert to make. I hope that you enjoy them as much as I did and try them our for yourself. This recipe makes 14 1″ cookies and it takes 18 minutes with 8 minutes for preparation and 10 minutes for baking.

What you need:
1 1/4 cups of chickpeas
2 teaspoons of vanilla extract
1/2 cup and 2 tablespoons of Peanut Butter(or a peanut butter substitution)
1/4 cup of honey
1 teaspoon baking powder
1/2 cup of chocolate chips
a pinch of salt if there is no salt in the peanut butter
Step one: preheat the oven to 350°. Mix all the ingredients together besides the chocolate chips. The easiest way to do this is to blend them in a food processor but, if you don’t have one you can blend them in a blender. Make sure that the batter is super smooth. Try scraping down the sides to get the chunks of chickpeas.
Step two: dump in the chocolate chips and pulse the blender or food processor. The batter should be thick and sticky.
Step three: Roll out the dough into balls on a cookie sheet. Make sure to wet your hands so that the batter does not stick to your fingers. If you want then to look like regular chocolate chip cookies press them down because they do not rise. Then bake for 10 minutes.
